Long parboiled rice

This type of rice is treated with superheated steam, which allows vitamins and minerals to pass from the shell into the grain of rice, and the grains themselves become less brittle. Grains of parboiled rice are yellow-amber color and translucent in appearance. The yellowish tinge disappears during cooking, and becomes the same snow-white as white polished rice.
